Profile
The atmosphere at Province hums with a palpable anticipation, where the culinary narrative emerges from the heart of Singapore’s vibrant Joo Chiat neighborhood. As we stepped through the unassuming entrance of the 808 Eating House, the transition into this intimate eight-seater oasis felt almost ceremonial. The subtle blend of warm wood tones and soft lighting enveloped us, immediately signaling a departure from the bustling streets outside. It was here that Chef Law Jia-Jun’s vision came alive, where each dish is a testament to his respect for local ingredients and the culinary traditions of Southeast Asia. We were greeted with a genuine warmth that felt less like service and more like an invitation into a family gathering, a sentiment echoed throughout the evening.
As we settled into our elegantly appointed seats, the rhythmic clinking of delicate glassware and the subdued murmur of fellow diners created a comforting backdrop, punctuated by the gentle hum of the kitchen. Each course, meticulously crafted and artfully presented, unfolded with a sense of narrative clarity. Notably, the prawn and sago toast with a delicate topping of uni was a revelation, its textures harmonizing beautifully, while the unexpected bursts of flavor danced upon the palate like a well-rehearsed performance. The meal progressed with a thoughtful cadence, each dish arriving like a chapter in a carefully curated story. The collaboration with Martell showcased Chef Law’s deft touch, seamlessly integrating the spirit into the culinary experience. We found ourselves particularly enchanted by the Teochew style braised duck, which carried the essence of nostalgia, capturing the heart and soul of home-cooked meals.
The elegance of each plate was matched only by the attentiveness of the service, where every detail—from the pouring of wine to the gentle explanation of each dish—further enriched the experience. As the evening deepened, the ambiance shifted ever so slightly, allowing for a more intimate exchange among diners while the aromas from the kitchen wafted through the air, igniting curiosity and conversation. Guests often lingered, savoring not just the food but the shared moments that unfolded around the table, a reminder of the communal spirit that Chef Law seeks to foster. Our concierge recommends securing a reservation at the chef’s counter for an up-close view of the culinary artistry in action, allowing you to fully embrace the rhythm of the evening while indulging in the seasonal tasting menu that pays homage to the rich tapestry of Singapore’s food heritage.

Their entrance is located within 808 eating house. Enter from the eating house and walk straight in.
Chef Law is extremely thoughtful, passionate and knowledgeable about the process behind the menu he curated, and everything was so freaking delicious. His team took real good care of us and we had a very nice time there.
The price point is very fair for the quality, effort and presentation of the entire dinner. We did a Martell inspired cocktail pairing with our meal (hesitant at first because my mum don't really drink Martell) but we had no regrets, the drinks were super on point even for my mum who doesn't drink cocktails.
Amazing service from the team, I can't wait for the next meal at Province!
The food is quite good — beautifully plated, balanced in taste, and full of depth without being heavy. You can really sense the intention behind the dishes, with thoughtful combinations that let the ingredients shine rather than being overshadowed. It’s not just about presentation; every bite carries flavor and character.
The service team is knowledgeable and warm, explaining the stories behind each course while keeping the experience relaxed and approachable. The space itself is intimate and understated, which allows the focus to stay on the food and conversation.
Province shows that fine dining doesn’t need imported luxury to impress — it proves that Southeast Asia’s own ingredients can be just as elegant and memorable. A must-try if you’re in Joo Chiat and looking for a unique culinary experience.
Province X Martell
Thank you so much, Chef Law & Team! Everything about the meal was wonderful – from the friendly staffs to beautifully presented dishes. I left feeling completely satisfied and happy!
My top 3: Prawn and sago toast with uni, golden cap farms and muscovy duck.
It definitely exceeded my expectations. Highly recommended. And yes, already planning my next visit!
